Leaving these greens raw will give you the full nutty and peppery experience that Arugula has to offer and it works well in salads, pestos or layer onto breakfast wraps, burgers and sandwiches. If you are going to cook with this leafy green, we suggest doing it as lightly as possible to keep as much of the flavour and texture. Try it lightly sautéed like any other green, or add into soups, stews, and omelettes. Toss onto pizza’s, stir fries and pasta dishes.
