3/4lb bag - unwashed, raw they will keep up to 7 days when stored in a sealed container in the refrigerator’s crisper drawer. Cooked green beans will keep 3 to 5 days when stored in the refrigerator. Just prior to cooking, rinse and remove tips from stem end. When boiled or blanched, it is also important to shock the beans in an ice bath after heating to prevent the beans from overcooking and becoming mushy.

Yellow - ideally harvested young, are crisp, succulent and tender firm, with mellow grassy sweet and nutty flavours. Yellow beans can be utilized in the same fashion as French beans, classic Green beans and Purple beans. They do, however, stand out, compared to other beans, in salads and alongside several companion ingredients. These beans are incredible blanched in salads with a classic vinaigrette, indulged with rich sauces such as brown butter and bécahmel.

Green - have a mild, fresh grassy flavour well suited for both raw and cooked applications such as steaming, sautéing, roasting, and stir-frying. The beans can be served whole, halved, or sliced and tossed into green salads, mixed into grain bowls, or simmered into curries, soups, and stews. These beans can also be steamed or roasted and served as a side dish, stir-fried with other vegetables, incorporated into quiches, or cooked into creamy casseroles. They are popularly used in quick pickling recipes and canning.

Purple - mild, subtly sweet, grassy, and earthy flavour suited for raw and cooked preparations. Fresh beans are favoured for their two-toned colouring when sliced, as the exterior purple hues are contrasted with the bright green interior. Chefs popularly cut the beans on an angle or slice lengthwise to showcase this colouring and serve as an edible garnish, ingredient in salads, or in grain bowls. They can also be pickled and used as a tangy condiment or a spread on sandwiches. These beans can be blanched or steamed with aromatics and served as a simple accompaniment to main dishes. It is worth noting that the purple colouring will not remain once the beans are cooked over high heat and will develop a green hue. They can be incorporated into soups, curries, and stews, added to stir-fries, stirred into noodle and rice-based dishes, or cooked with other vegetables as a side dish.
