Carrots - Major Harvests

This month the whole crew has taking a turn or two on harvesting the carrot beds. Down to less than one row of our main season and all of our winter storage rows left. Many of these plantings were some of the nicest and fullest carrot beds we have ever accomplished. Super motivating to have the ‘perfect’ carrot bed.

In 23’ we grew 9-10 different varieties of carrots. Ranging from a couple of different oranges to purple, yellow, red, white and multicoloured.

Rainbows are our go to cooked carrot. They hold they texture so well, leaving that satisfying crunch we all love. Visually they are gorgeous cut up for platters, in salads or slaws. The darkest purple colour may leak out a bit when cooked however it is lovely in a fresh juice instead of beets.

Classic orange is a bolero or yaya varieties that are a tried a true. Great for storage, lovely sizing and shaping. These are great in the classic mirepoix, shredded into coleslaws, or just eat raw.
