Market Meal - Stuffed Pepper
Our market inspired meal this week is a quick and easy Stuffed Pepper.
Started by cutting bell peppers in half and hallowing them out of their seeds and stem. We took cooked quinoa, sautéed chorizo sausage, carrots, onions, spinach, garlic, turnip, asparagus, mushroom, shredded mozzarella, Za’atar seasoning, garlic & onion powder, red Italian seasoning, salt and pepper. Combined them and stuffed the empty peppers with that mixture. We topped the peppers with more cheese and then baked until golden brown at 350F. Final touches, we added a handful of our epic micros and flowers blend, arugula and creamy dill dip.
