Onions 2024 - Reel

During the fall we harvested and cured, shallots, sweets, white, storage yellow, cipollini & red onions. We tried a new technique by hanging our onions vertically verse laying them horizontally. This method required more work, due to pulling the onion leaves through the wire racks. Once complete it looked really freaking awesome with them all hanging.

Onions in particular, have been known to build flavour to a large amount of dishes around the global. They store well for long periods of time and is one of the most ancient food sources recorded. It is not known for certain where they originated from but many guess central Asia, Iran and West Pakistan area.

Egyptians worshiped onions thinking its rings symbolized eternal life. Indeed, it was often buried along with their dead. Ancient Greek athletes consumed large quantities of them thinking it would β€œbalance” their blood and improve their athletic prowess.

We love using them in almost any soup, stock, sauce, dressing, dip and marinade. They work wonderfully pickled, fermented, dehydrated for powder or even frozen. Used as an ingredient in many of our favourite herbalism recipes like, fire cider, in tinctures, sliced and put in our socks when we sleep, cut and left out on the counter, fermented with raw honey and even raw in health shots.
