Asparagus Warm Potato Salad - Recipe Idea
Asparagus season has slowly begun and that means our family will be eating it for about a month straight! Eating seasonally is very important to us for many reasons. For one, it makes us much more appreciative of the each moment in our growing season because not everything should be grown and consumed 365 days a year. We will go 11 months without eating any fresh which makes that one month extra special. Secondly, it connects us with how food use to be consumed in homes, brining back more of a ancestral way of eating. Back in the day we couldn't get our produce flown or driven in from out of country. Finally, we get the best quality, superb flavour and the highest amount of nutrients every time!
By next week we should have an abundance of asparagus on our online farm store, in produce boxes and on our market table! With our first personal harvest, KK requested a lovely warm potato salad. Creating slight ingredient changes throughout the year like switching to garlic scapes and bush beans in summer.
How we made it - Cut russet potatoes in wedges and quickly parboiled them, drain and then fry with a little of your favourite oil until crispy and golden over medium - high heat. Once complete place them into a mixing bowl. Using the same pan heat up a bit more oil and sautéed chopped up asparagus, garlic ramps and sliced baby carrots for 3-5 minutes on medium heat. Remove and add to your bowl of potatoes. Toss in diced raw kohlrabi and sliced french breakfast radishes to your bowl. Top with a homemade herby dressing, toss together and serve. Dressing was made with homemade mayo, fermented grain mustard, yellow mustard, freshly chopped dill herb, garlic ramps, extra virgin olive oil, lemon juice, lemon zest, salt and pepper. Chicken breast was rubbed with a quick homemade seasoning mix of cajun, Italian spicy mix, ground cumin, ground ginger, dried herb mix from our harvest last year, salt and pepper. Baked in the oven at 350F until they were cooked to 165C.
