Produce Of The Week; Rainbow Carrots

This week let’s chat about rainbow carrots! 

We are on our third year of growing these colourful carrots and what can I say, we are in love. Our market peeps did a double take when they saw these fresh guys on our table and for all the ones who braved their different appearance and tried them, they often came back with comments like, “these are better than orange carrots!” We even made a kids birthday party, it was rainbow themed! 🤣

What did they do to the carrots to make them that colour? Absolutely nothing! Although carrots were originally purple, other colours such as red, white and yellow also appeared in Asia thousands of years ago. About 200 years ago, the first orange carrots were cultivated in the Netherlands. 

If you haven’t noticed we love to add as much colour in our meals as possible, this is our go to carrot blend! In 2022 we explored many different varieties and moving forward we picked our favs from last year to plant this spring and summer. 

We use them in quite a few different applications! Try them raw for the most beautiful colouring and texture around. They will work as a replacement for regular orange carrots in any cooking dishes. Throw them on the grill or oven roast for elevated dinners. Juicing them adds all the health benefits of whichever colour you use! We have pickled them and they turned out stunning.
