Sourdough pasta is our unique product: they applied the ancient technology of natural sourdough fermentation to pasta-making. Because they use a natural sourdough to ferment the pastas, there are several differences between their pastas and conventional pastas:

Cooking time: the pastas cook very fast: 5-6 minutes depending on the shape.

All gluten-grains like wheat, rye, spelt and Kamut®, must include a fermentation process which initiated the breakdown of the gluten in advance of human consumption.
It is not the grain’s fault, but the modern way these grains are under-prepared prior to human consumption – that makes the difference.
Pasta Fermentata is a delicious, easy-to-digest, and highly nutritious alternative to regular wheat pasta. Sourdough fermented pastas are nutritionally superior because the fermentation makes the nutrients easier to absorb. This pasta is vegan, egg free, nut free, salt free, dairy free, naturally fermented, no artificial colour, no artificial flavour, no chemical additives. It is traditionally fermented, made with premium ingredients from all over Canada, twelve flour combinations and cooks in 6 minutes. It also contains dietary fibers, B-vitamins, potassium, and iron. Ingredients include, Durum Semolina Flour, Organic Millet Flour, Natural Spring Water, Natural Sourdough Culture, Extra Virgin Olive Oil.
Made from Semolina and Certified Organic White Flour, this pasta is closest to a classic Italian pasta. The shape of this pasta is most commonly known as radiatori, but kids might like its alias: ‘dinosaur bones’. It has a curved body with ribbed edges on the outside that increase the surface area, and in turn increases the amount of sauce that can be absorbed by each noodle. This pasta is best served with a thick cream or tomato-based sauce.
