Seasonal Food - Garlic Scape - Reel

We have two different varieties growing this year, Red Chesnok and Red Russian. Both are producing beautiful garlic scapes right now, which is when the plant begins to produce seed. Sending out an edible stem and flower, which is incredibly delicious.

Our favourite ways to prepare garlic scapes are;

⁃ Tempura fried

⁃ Tossed in olive oil and roasted in the oven or on the BBQ grill

⁃ Used in pestos and hummus

⁃ Sliced thin in salads

⁃ Used to make garlic and herb butter

⁃ Chopped up and added into pastas, rice, egg and potato dishes

⁃ Chopped up into any homemade dip or dressing

⁃ Pickled

⁃ Dehydrated into powder

Pairs well with artichokes, peas, fava beans, morel mushrooms, early summer squash, new potatoes, radishes, citrus, eggs, olive oil, duck fat, bacon, garlic, pine nuts, white beans, lemon juice, arugula, sea salt, robust cheeses, basil, oregano, and parsley herbs.
